Sweet and Spicy Roasted Kabocha Squash

Image
My brother is here! He's visiting this whole week and I might not do as much blogging as usual, so I actually wrote this post on Saturday and scheduled it. Yay for planning. I've seen kabocha squash on other blogs but never tried it myself, partly because I was intimidated. But I saw one at Whole Foods the other day and just bought it. I decided to roast it up with some seasonings, partially inspired by this recipe: http://www.justhungry.com/ sweet-and-spicy-roasted- kabocha-squash Sweet and Spicy Roasted Kabocha Squash 1 kabocha squash 1 tsp cinnamon 1/2 tsp chili powder 1 tsp ground cumin 1/4 tsp stevia 1 tbsp Braggs 1 tbsp water Wash your kabocha squash and chop into thin wedges with a big, strong knife. No need to peel! Mix your seasonings and dilute with water and Braggs Dip each squash piece in the seasoning mix and place in a roasting pan. Roast at 400 for 20 minutes on each side or more, depending on the thickness of your slices. I stuck mine in for an extra ten minute...

Frankie, Alice, Butternut Squash, and Beets

Tonight I was fortunate enough to go see a screening of Frankie and Alice, Halle Berry's new movie, and a Q & A with Ms. Berry herself. Her performance is getting Oscar buzz even though the film doesn't come out in LA until December 10th and in the rest of the country until February. I won't tell you anything about the movie besides that it's based on a true story of a woman in the 70's struggling with multiple personality disorder. I just have to say again - I love the 70's! Ahhh, the clothes, the makeup, the interior furnishings... I just want to live in it. And oh. my. gosh. Halle Berry is so gorgeous in person. I'd never found her to be drop-dead gorgeous until I saw her in real life. I was only in about the fourth row so I was fairly close. Her skin is incredible, and so luminous, and she wasn't wearing a ton of makeup like some celebrities do. She's just naturally beautiful and obviously takes great care of herself. What an inspir...

Southwestern Vegetable Soup

I have a good recipe for you today. I plan on being slightly interesting this week, because I have a few fun recipe ideas. I had a fun weekend and went out to bars and stayed out very late. I was never 21 in college so I have to enjoy it now. =) On Sunday I went to the Farmers' Market and bought some fun things. I also listened to the songs "All Summer" and "Erase Me" by Kid Cudi on repeat. I'm always like that - I get obsessed with a song and then I can listen to it a hundred times in a row. Yesterday was busy with Power Group and then the LA Actors Tweetup at Busby's East. I feel silly using that word but it is pretty self-explanatory - Twitter + meetup. It was fun and I met a lot of new people! It did get really loud at one point, though, and I went and sat down and texted for about five minutes just because I couldn't handle trying to hear people anymore. I don't have a great sense of hearing and trying to talk to people in a lo...

BBQ Millet-Stuffed Pattypan Squash

Image
I have four auditions in four (week) days! I had an audition today for an educational video at the Scientology Celebrity Center, which was cool because it's a beautiful building and I never would have gone there otherwise. Then I have three more auditions tomorrow, Friday, and next Monday. I love being busy. Last night I made something pretty fancy for dinner and I was proud of myself. When I was at Whole Foods the other day I saw a pretty pattypan squash and I figured it would just be wrong to go all summer without eating one. I stuffed it with a variety of veggies and some millet, a delicious new grain. Grains are so easy - just boil them with a little water and cook like rice until it tastes done. BBQ Millet-Stuffed Pattypan Squash 1 pattypan squash 1/2 cup cooked millet 2 sundried tomatoes, chopped 1/4 cup fresh basil, chopped 1 carrot, chopped 1 stalk celery, chopped 1/4 yellow onion, diced 1 green onion, chopped 1/4 cup barbecue sauce (I used Trader Joe's KC BBQ sau...
