Classy Carrot Cake Rice Pudding

I made rice pudding! That is some classy shit, is it not? I bought this rice mix from the Whole Foods bulk bin that had brown rice, wild rice... fun stuff. This... to this. Classy Carrot Cake Rice Pudding 2 cups rice 5 apples 5 carrots 1 tsp cinnamon 1/4 tsp cloves I cooked it normal styles with twice the amount of water, brought to a boil, simmered for about 40 minutes. Chopped apples and carrots, cooked with the rice. Then I processed it all in the food processor! Happy times! Still looks like rice at this point. Mixy mixy. Boom. I sprinkled some oats on top because it looked terrible as just a big brown glop. But this stuff is crazy delicious, I promise. And I love the wild rice -- because it's chopped up in the food processor, it gives it a great texture akin to walnut crumbles. I also just love wild rice. Today was a relaxed, productive day. I worked out on the bike and lifted weights, wrote postcards to follow up with casting directors I've met, checked out 8x10 proofs for my new headshots, went grocery shopping, posted my old twin bed on Craigslist, and talked on the phone to everyone I know. OK, not quite, but I talked on the phone a lot. Today I have a recipe that is delicious but I must warn you -- there is no way to make this look appetizing. It just looks gross. Avocado puddings (aka chocomole) are popular in the raw food world because of their creamy texture, but they're very high in calories and fat. For a lower-fat and lower-calorie option, try pumpkin pudding instead! Chocolate Pumpkin Pudding 1/4 cup canned pumpkin 1/16 tsp stevia (maybe?) 1 tsp cocoa powder 2 tsp ground flax Mix. That's it. Rollerskating Karaoke Birthday!

My birthday was so much fun! First, we all went rollerskating. None of us had been rollerskating in about a decade so it was quite an adventure but we all survived. That's my step-mom, me, my mom, my step-dad, my brother, my baby brother, and my dad. I declared a 70's theme so my step-mom, mom, and dad were all wearing my dad's high school T-shirts and my step-dad shaved his beard retro style (not just for my birthday, but for a retro NYE party tonight, too). Oh, what a blast. And I think I've never laughed harder than when my mom tried to spin with me in the middle. I am NOT that good of a rollerskater! Afterwards we went to Local Burger for dinner and got salad! I wrote about them before here . Yes, my ideal birthday dinner is salad. Then we came home for cake. Busy Hometown Week; Pumpkin Bread with Soy Flour

Oh man I have been so busy! I have barely even had a moment to use the computer and keep up with my blog reading, much less my blog writing! On Wednesday (after blogging) I hung out with my brother and went and saw his new house. He is now watching four dogs - his new puppy, his roommate's new puppy, and my parent's two dogs. Thursday was my mom and step-dad's 10-year wedding anniversary so we went out to celebrate! We saw The Tourist, the new movie with Angelina Jolie and Johnny Depp. I liked it, most of all because it's absolutely gorgeous. For dinner we went to a Greek restaurant downtown that's a Bloomington institution called The Trojan Horse. Sorry for the terrible picture - I was trying to be inconspicuous - I got a veggie sandwich but subbed hummus for tzaziki. I ate about half and gave the rest to my step-dad. Thanksgiving, Vegan Style

You probably know what you're making for Thanksgiving dinner this year but in case you need some inspiration, I have one hell of a post for you. Last year was my first vegan Thanksgiving and we went all-out. I spent weeks thinking of what I wanted to make because I wanted to re-create every traditional non-vegan food and impress our non-vegan guests. It turned out GREAT. We had a delicious meal that was actually pretty healthy, too! That's me, my boyfriend at the time, my step-dad, and my brother and his girlfriend. My mom was taking the picture. Everyone was vegan except my brother and his girlfriend. Left to right - green bean casserole, dumplings (above), Tofurkey, stuffing My plate from last year. From the potato dumpling, clockwise there's stuffing, green bean casserole, roasted asparagus, cranberry sauce (from a can, like my family enjoys), and Tofurkey with gravy.
