Ooh do I have a recipe for you today! It may not look like much but believe me, it is. So I told you about my audition and booking yesterday (yayy). After the audition and my miraculous escape from a parking ticket, I went to the Meet Market for its last day of business. I had heard really good things, especially about the weekend brunch, but I'd never gone. Then I read on Quarrygirl that it was closing yesterday. I was only five minutes away and I heard that their grocery items were 50% off, so I checked them out. I ended up buying one desserty-thing that I plan on giving as a gift to someone and two of these to live in my car and serve as emergency snacks. I was only a couple minutes away from Nature Mart Bulk Bin, and I had planned ahead by bringing my empty Dr. Bronner's hand soap dispenser. Eggplant: Raw and Cooked

I never liked eggplant before I went to China. Then I learned the joy that is qie zi and I've loved it ever since. If you want an oily splurge, get some eggplant in an Asian restaurant. Or make it yourself. You can stir-fry it, roast it in the oven with some tomatoes, onions, zucchini, and squash, and you can flavor it Asian or European style. You can also cut it into thin strips and use it for Raw dishes like manicotti and ravioli. I made some Raw manicotti in March that had cashew cheese and spinach on the outside, rolled up inside thin, marinated eggplant slices. It was super good. I finally made the eggplant that I bought last week. I cut it into thin slices on my mandoline and then made half of it into a cooked dish and half into a raw dish. Here are the recipes. Big Whole Foods Shopping Trip

Today's food intake was a little weird, mostly because I just wanted to eat brussels sprouts. Breakfast: approx. 1.5 cups brussels sprouts, .25 cups black beans Lunch: 1 cup brussels sprouts, exactly the same salad I had for dinner last night (spinach, black beans, pineapple, red pepper) Dinner: 1 cup brussels sprouts, .25 cups black beans, 1 small sweet potato w/ nutritional yeast So all those brussels sprouts from yesterday's photo are gone. I had a pretty busy day - I woke up at 7 (I went to bed at 10:30 last night) and started my day off with a workout while watching an episode of Jillian Michaels' new show, Losing It with Jillian. I've never watched The Biggest Loser, but I'd heard good things about Losing It. I watched the pilot episode, and it really did seem like she made an impact on that family's life and helped them turn their health around. For my workout I did leg lifts, squats, and that kind of thing, jumping jacks, some yoga moves, and weights...
