Freakishly Easy Curry Tempeh Loaf

I don't make a lot of tofu or tempeh recipes but for some reason I was just craving some this past week. I picked up a block of tempeh at TJ's and after debating for about four seconds how I wanted to make it, I made what I will now dub the easiest tempeh recipe evaaa. Curry Tempeh Loaf 1 slab tempeh 2 tbsp ketchup 2 tsp curry powder Cut tempeh into two servings. Coat one side with ketchup and curry powder. Bake at 350 for 15 minutes. Flip tempeh over. Coat other side with ketchup and curry powder, bake another 15-20 minutes. Surprisingly, it tastes really good. I got the idea from German Currywurst - it's sausage with ketchup and curry powder, especially popular in Berlin. Then I got really creative and added it into some colcannon. This would taste amazing with some sauerkraut, but I didn't have any. Light and Fresh Pasta Salad

I have another lovely dinner for you guys today. And I can even post the recipe this time! For lunch yesterday I ate the leftover veggies from the previous night's sandwiches along with some leftover salad and Indian curry hummus. For dinner I made pasta salad, fruit salad, and BBQ seitan and tempeh. We ate it in our dining room, but I think it would make for great picnic food. That's another thing I love about vegan food - it doesn't go bad and give you diseases when it sits out in the sun for a few hours. Yay! The fruit salad had grapes, blackberries, strawberries, raspberries, kiwi, a few blueberries, Braeburn apples, and an entire fresh pineapple that I cut up. All organic. Yippee. The BBQ seitan and tempeh was the easiest part of the meal - I just put it in a pan, let it brown a little, then put on some barbecue sauce and cooked it until it was warm. Well phase one of my vacation has come to an end, because my mom and step-dad left today to go back to Indiana. =( It had been five months since I saw my mom, which was tied for longest time apart with my study abroad semester in China. Thank golly for Skype. We've already set up a coffee and Skype date tomorrow because we already can't freakin' stand it! We did have a great weekend, though. On Saturday we hung out a little in Kansas City. But first we had a yummy salad for lunch. There's three kinds of lettuce, carrots, tomatoes, sprouts, purple pepper, and chives. Instead of dressing we used Indian Curry hummus. WOW! I hadn't ever eaten curry hummus, but I really recommend it. You could probably make it yourself just by mixing hummus with a bunch of curry spice. This stuff is stroooong.
