Soup/Stew/Scramble/Dal

Image
It's clear that I've mastered the soup/stew/dal combo from winning recipes like Indian-Spiced Yellow Split Pea Soup , Green and Orange Soup , Indian-Spiced Barley Stew , and Mushroom Dal . But now I've taken it up a notch and I introduce the soup/stew/dal/tofu scramble. I started with my Eggless Egg Salad from yesterday. I knew I wouldn't be able to finish all the leftovers as is (it made a lot) and I had some other veggies I wanted to make into soup. Then I got this craaazy idea to put in a couple scoops of my eggless salad. Like so: This was vaguely the recipe: Eggless Salad Split Pea Soup 1 cup yellow split peas 4 cups water 2 bunches kale stalks 1 bunch carrots and greens 1 onion 1 bunch celery 1 eggplant 1 tbsp mustard 1 tbsp garam masala 1 tsp curry powder 1 cup Eggless Egg Salad Chop all veggies, cook at least an hour until the correct texture, season to taste and mix in eggless salad. You can put any veggies in here. Seriously, try it. It's really...

Basil Eggplant

Aughh I spent so long in traffic today. I had an audition at 4 at USC which just was perfect timing for terrible traffic both ways. Including the hour I spent waiting for my two minute audition, I was gone for over three and a half hours. This morning I worked out, spent time researching TV shows, and watched Lethal Weapon. I love Danny Glover. He's like my grandpa. Not like my actual grandpa, but he would be another one. Speaking of my real grandpa, he's going to go see Bloomington at the Tampa Gay and Lesbian Film Festival next month. That makes me happy. =) For dinner I made a simple Thai recipe - Basil Eggplant. I started with this strange eggplant: And a bunch of Thai basil. Basil Eggplant 1 Italian or two Asian eggplants garlic 1 tsp red curry paste or red pepper flakes 1/2 bunch Thai basil, de-stemmed Braggs 1 tsp sugar Cut your eggplant into odd-sized chunks to make them easy to stir. Heat up garlic, add eggplant. Add about a cup of water, cover, and let cook u...

Eggplant: Raw and Cooked

Image
I never liked eggplant before I went to China. Then I learned the joy that is qie zi and I've loved it ever since. If you want an oily splurge, get some eggplant in an Asian restaurant. Or make it yourself. You can stir-fry it, roast it in the oven with some tomatoes, onions, zucchini, and squash, and you can flavor it Asian or European style. You can also cut it into thin strips and use it for Raw dishes like manicotti and ravioli. I made some Raw manicotti in March that had cashew cheese and spinach on the outside, rolled up inside thin, marinated eggplant slices. It was super good. I finally made the eggplant that I bought last week. I cut it into thin slices on my mandoline and then made half of it into a cooked dish and half into a raw dish. Here are the recipes. Spicy Italian Eggplant 1/2 eggplant, sliced or cut up however 2 tomatoes, diced Garlic Chili powder Paprika Italian seasoning Turmeric Fennel seed Stir-fry and add seasonings to taste. The fennel seed gives ...
