Oats and Porridge. The Real Deal.

Image
Strength, endurance, energy, beauty and perceptiveness . All are qualities attributed to the oat. The last two might be pushing it ever so slightly, the first three are bang on. What has the oat got that other grains have not? Why are we, in the UK, eating porridge on a scale not seen since the introduction of Corn Flakes and sliced bread? Take a handful of oats... Let's start with the smell Inviting, sweet and friendly, like an old pal. Then there's the taste Porridge is warming, comforting and familiar. Reason enough to love it. Moving on to strength, energy and endurance . Oats are rich in B vitamins, calcium, iron and magnesium. They provide slow release energy which means you'll feel fuller for longer and you won't be climbing the walls by 11am on a sugar crash. They are high in fibre, so keep you regular. You know what we are saying. Finally  Apparently oats can also boost your sex life.     soak overnight in water... Getting the most from your oats To maximise ...

Classy Carrot Cake Rice Pudding

Image
I made rice pudding! That is some classy shit, is it not? I bought this rice mix from the Whole Foods bulk bin that had brown rice, wild rice... fun stuff. This... to this. Classy Carrot Cake Rice Pudding 2 cups rice 5 apples 5 carrots 1 tsp cinnamon 1/4 tsp cloves I cooked it normal styles with twice the amount of water, brought to a boil, simmered for about 40 minutes. Chopped apples and carrots, cooked with the rice. Then I processed it all in the food processor! Happy times! Still looks like rice at this point. Mixy mixy. Boom. I sprinkled some oats on top because it looked terrible as just a big brown glop. But this stuff is crazy delicious, I promise. And I love the wild rice -- because it's chopped up in the food processor, it gives it a great texture akin to walnut crumbles. I also just love wild rice. I didn't sweeten the whole recipe so I could just sweeten each serving at will and save stevia. Added almond milk. SO good. Later on I tried it with almond milk and a lit...

Christmas Brunch: Apple Cinnamon French Toast

Image
Wow, it's been almost a week since I posted! I didn't mean to disappear, but I've had every single moment of my time dominated by family - and I mean that in a good way, of course! Now I'm at my dad's house in Lawrence, Kansas and I'll be here until Friday. I have a lot to share with you but I'm still pressed for time so I'll just share our Christmas morning brunch right now. On Christmas morning my brother came over and we opened presents first thing! First up was stockings: My big present was some money towards my Screen Actors Guild union membership. Yay! We also played with my brother's puppy, Buster. And then we made and enjoyed brunch. Here I am, with the spread: French toast, fruit salad, and veggie breakfast sausages. You guys are going to love the french toast recipe, because it was delicious, easy, healthy, and perfect for special occasions! Apple Cinnamon French Toast One loaf of bread, sliced - we used wheat sourdough, but anything...

Busy Hometown Week; Pumpkin Bread with Soy Flour

Image
Oh man I have been so busy! I have barely even had a moment to use the computer and keep up with my blog reading, much less my blog writing! On Wednesday (after blogging) I hung out with my brother and went and saw his new house. He is now watching four dogs - his new puppy, his roommate's new puppy, and my parent's two dogs. Thursday was my mom and step-dad's 10-year wedding anniversary so we went out to celebrate! We saw The Tourist, the new movie with Angelina Jolie and Johnny Depp. I liked it, most of all because it's absolutely gorgeous. For dinner we went to a Greek restaurant downtown that's a Bloomington institution called The Trojan Horse. Sorry for the terrible picture - I was trying to be inconspicuous - I got a veggie sandwich but subbed hummus for tzaziki. I ate about half and gave the rest to my step-dad. I also got a bite of his falafel sandwich and it was delicious. Yesterday I went to my old high school to talk to the theater class about wha...

Whoa, Dinner for Breakfast and Breakfast for Dinner!

Image
We had pretty standard dinners growing up -- pasta night, and umm... pasta night... and do-it-yourself night, but the most special was always breakfast for dinner night. What?! Breakfast for dinner? But there are rules about these things! Now that I've lived in China, I find American breakfast foods kind of funny. We're so particular about what we eat for breakfast - usually something carby, sugary, and devoid of nutrition, though for some reason, eggs and bacon are also acceptable to many. In China you pretty much eat for breakfast what you might eat for any other meal -- rice, vegetables, etc. There's a porridge called zhou (also called congee), but you can eat that for dinner, too, and it comes in sweet and savory varieties. So today, without really planning it, I switched my breakfast and dinner foods. Breakfast: 1/2 can Amy's Tuscan Bean and Rice Soup Lunch: 1 baked potato, 1/2 cup brussels sprouts Dinner: 1 cup brussels sprouts, 2/3 sweet potato (cut into f...
