Continental Drift: Cagematch Champions!

My job and general lifestyle doesn't have a consistent schedule, but I've fallen into a bit of a routine recently. Here's a little taste of my general schedule over the last three weeks. Mondays: Go to Harold Night at UCB! Tuesday: Internship at UCB Wednesday: Improv 401 class, then practice with my team Badge Patrol I have a couple hours between class and practice, so I've been walking to Whole Foods and getting some veggies from the salad bar as my special Wednesday treat. :) If you're careful with your purchases, you can get a good dinner for $3-$5. Spicy cauliflower and peas! Ratatouille put on top of salad. Who cares Three weeks in a row. Mmmm that Indian-style cabbage and peas was delicious. I wish I could eat all my meals at Whole Foods. Thursday: I've been going to the 11th Hour improv show pretty consistently, and they've been having some great shows. Christmas Eve Dinner: They Won't Know It's Vegan Lasagna

Today I bring you a great crowd-pleasing lasagna recipe. We made it for Christmas 2009 and repeated it for Christmas Eve dinner this year. We've made it a few other times for omnivorous guests and they can't believe there's no cheese! I Can't Believe It's Vegan Lasagna 1 box lasagna noodles 2 jars spaghetti sauce 12 oz. soy crumbles 4 cups veggies - spinach, mushrooms, zucchini 6-8 oz. shredded mozzarella soy cheese (like Follow Your Heart, Daiya) 1 block firm tofu 1 8 oz. tub vegan cream cheese (Tofutti), can use 6-8 oz. 2 tbsp olive oil (optional, I omitted) 1.5 tbsp. lemon juice 3 cloves garlic 3 tbsp nutritional yeast 1/2 teaspoon each oregano and basil 1/2 teaspoon salt, to taste Boil lasagna noodles, drain when firm but cooked and let cool. Cook veggies and drain. Microwave soy crumbles, shred soy cheese. Put tofu ricotta ingredients except cream cheese into food processor and pulse or use a potato masher. Rollerskating Karaoke Birthday!

My birthday was so much fun! First, we all went rollerskating. None of us had been rollerskating in about a decade so it was quite an adventure but we all survived. That's my step-mom, me, my mom, my step-dad, my brother, my baby brother, and my dad. I declared a 70's theme so my step-mom, mom, and dad were all wearing my dad's high school T-shirts and my step-dad shaved his beard retro style (not just for my birthday, but for a retro NYE party tonight, too). Oh, what a blast. And I think I've never laughed harder than when my mom tried to spin with me in the middle. I am NOT that good of a rollerskater! Afterwards we went to Local Burger for dinner and got salad! I wrote about them before here . Yes, my ideal birthday dinner is salad. Then we came home for cake. My mom found one slice of vegan carrot cake at the store, and that was it. So carrot cake it was! I opened presents. It's my birthday! We're going to dress up in 1970's clothes and go rollerskating! OK, I'm not sure how many people I'll actually get to dress up, but I'm going to. Christmas Brunch: Apple Cinnamon French Toast

Wow, it's been almost a week since I posted! I didn't mean to disappear, but I've had every single moment of my time dominated by family - and I mean that in a good way, of course! Now I'm at my dad's house in Lawrence, Kansas and I'll be here until Friday. I have a lot to share with you but I'm still pressed for time so I'll just share our Christmas morning brunch right now. On Christmas morning my brother came over and we opened presents first thing! First up was stockings: My big present was some money towards my Screen Actors Guild union membership. Yay! We also played with my brother's puppy, Buster. And then we made and enjoyed brunch. Here I am, with the spread: French toast, fruit salad, and veggie breakfast sausages. Holiday Family Whirlwind (or Blizzard?) in Northern Indiana

On Saturday night I went with my mom and step-dad to see Guster at the Bluebird. It was a great concert! We left on Sunday morning along with my brother and his girlfriend (all crammed in one car) for North Manchester, Indiana, where my step-dad's family lives. We go there to celebrate Christmas every year. We picked up some provisions at Bloomingfoods. I got the brussels sprouts and magic tofu - a delicious creation (that some have compared favorably to chicken nuggets, surprisingly) with garlic and onion powder, pepper, and nutritional yeast. I snagged a bite of my mom's breakfast sandwich, which had a slice of vegan cheese, a vegan sausage, and a polenta circle in an English muffin. It's really good! I love the addition of polenta to a breakfast sandwich, and it kind of looks like eggs without trying to impersonate them. First, we opened presents. I'm Thankful for the Whole Foods Salad Bar!

I had a nice Thanksgiving. My roommate thought I was lying when I said I didn't want to celebrate and so she thinks I'm crazy/sad/anti-social but really I had a good time. I worked out, caught up on some TV and movies, got some work done, read blogs, and went to Whole Foods for lunch. I watched Fringe and The Office on Hulu and the movies Valley Girl and I Am Love on Netflix instant view. Tilda Swinton learned Italian for I Am Love and is getting Oscar buzz. If you like artsy foreign films, check it out. I also made some postcards to send to acting contacts with this on-set photo from Big Shoes to Fill: But I like this one, too - While I was perusing the salad bar at Whole Foods a guy came up and struck up a conversation with me and asked for my number!
