Deconstructed Moong Bean Soup

I am really proud of my recipe today, even though it is incredibly simple. I am sure other people have done this before, but I feel like I invented it. So I'll just continue to pretend I did. I finished off my big bag of moong beans. I started out by making some moong bean soup with dry beans, frozen corn and artichoke hearts, kale stalks, carrots, and garam masala, kind of based off my Indian-Spiced Yellow Split Pea Soup. Then after I ate it all, I wished I could make more but I was out of most of the ingredients. So I created this super-awesome recipe that I shall call "deconstructed soup." Deconstructed Moong Bean Soup Soup: Dried moong beans Water Seasoned salt Optional -- garlic, curry powder, garam masala Raw spinach Raw broccoli and cauliflower Nutritional yeast Cook moong beans until soft, about an hour. Interesting response to the NuNaturals post . I realized, since I did a two posts in a row about specific companies, I'd like to make something clear - I get nothing out of this. I'm not writing ads. I do like to give back to those who give to me, so when I win something I'm likely to post about it, but I wouldn't ever say I like something that I don't. I mentioned in my post on motorcycle boots that I ordered a pair. Well, they came in the mail! Here they are: I'll get a better picture later. The company is Ikon & Co, which I couldn't find much info about. I bought them on the sample sale site Beyond the Rack. I wouldn't really recommend buying from them, though, because they have high shipping prices, take a long time to get to you, and charge you for shipping again if you need to return them, regardless of the reason. Erika Eats Cereal

I had an audition downtown on Friday. I snapped a picture on the drive home: The audition went well - thanks to the people who wished me good luck! I felt really good about it and got positive feedback. I'm supposed to find out on Monday or Tuesday. Friday night I watched "Winter's Bone," a critically acclaimed indie about a 17-year-old girl in the Ozarks hunting down her meth-cooking dad who jumped bail after putting their house up for bond. Jennifer Lawrence is getting potential Best Actress buzz and it's definitely a good movie with a very authentic feel and a surprising twist at the end. Saturday morning I had a workshop with Sara Isaacson, the casting director for Fringe. I love that show! I watched a couple more movies last night - East of Eden and Sin Nombre. Movies and Moong Beans

I had a very chill weekend - I watched a lot of movies! I watched The Purple Rose of Cairo, The Opposite of Sex, Dear John, Love Story, and Bright Star. The Purple Rose of Cairo is one of Woody Allen's biggest hits and I did like it. Jeff Daniels was adorable! I grew up thinking of him as Harry from Dumb and Dumber so it's funny to see him in a "heart-throb" role. I didn't love The Opposite of Sex, it was just OK. Dear John was enjoyable, and I was impressed with Channing Tatum. He was really natural and great with this honest, almost shy dialogue. I really liked Love Story. Ryan O'Neal was great and Ali MacGraw's wardrobe was amazing. I seriously want all those clothes!!! Bright Star was the best movie I saw all weekend, and if you haven't seen it, you should. It's a 2009 film directed by Jane Campion about John Keats' romance with Fanny Brawne. The acting was beautiful, the cinematography is beautiful, the poetry is beautiful. Th...

Salina River Festival; Beans, Rice, and Veggies Galore; Vegan Swahili phrases

So I went to the Salina River Festival this weekend. It was really hot, humid, and full of junk food. I didn't even try and find anything to eat there - I'd rather just bring my own food and not stress out. So I pretty much lived off of Luna bars and apples during the day and then on Friday night Dad took me to get a salad at the Dillons salad bar. Dillons is the same as Kroger or Ralphs depending on what part of the country you live in. My Ralphs is not very vegan friendly, so I was surprised to see that the Salina Dillons has a great salad bar with plenty of vegan-friendly items. I took a picture of one especially crazy-looking art piece at the River Festival to share with you all. Today I ate: Breakfast: 2 bananas mashed w/ oats Lunch and Dinner: Brown rice, black beans, artichokes, spinach, and broccoli I cooked up a small box of brown pecan rice - about four cups - and after it was done cooking I mixed in half a bag of raw broccoli, half a can of artichoke hearts, and...
